Chocolate dipped Peanut butter ice cream

When I first saw the original recipe post from All Day I Dream Food (about a month ago), I wanted to so badly make it right then. I kept talking about it like I was a sales person, trying to sell this ice cream idea to my family.
They were very eager to try it because who doesn't love peanut butter?

Popsicle ingredients
250gm cream cheese softened
1 cup creamy peanut butter
1/2 cup icing sugar
1/3 cream
1 tsp vanilla essence
1/2 tsp honey



Method
Beat all ingredients until well combined.
Spoon into Popsicle mould. Tap down to release as much air possible.
Put into freezer for 4 - 6 hours.
To remove, dip mould in tap water for 5 minutes. Gently twist to release from would. Place it on parchment paper and put it back in the freezer.





You can add some other flavoured ice cream

Meanwhile prepare chocolate dip.
 
Chocolate dip
For 6 Popsicle
1/2 - 1 cup chopped dark chocolate. Put it into a deep ceramic bowl. Heat it over a pot of simmering water.
 
Once ready, dip Popsicles in melted chocolate and put it back into freezer.
Enjoy after 10 minutes or cover it in cling wrap and enjoy whenever you need a cold treat.



Taste review
The chocolate shell was beautiful and cracked perfectly - not too hard nor too thin. It was almost as good as Magnum's chocolate shell but...
The Popsicle was far too creamy and rich for us.

Won't be making the peanut butter Popsicles again but the chocolate shell is a keeper and will be great for other Popsicles or drizzled over dessert.
